Creamy Jalapeno Dip



1 quart mayonnaise (not Miracle Whip)
1 cup buttermilk (half buttermilk, half sour cream)
1 cup jalapenos (canned - not fresh) and some juice for desired consistency
1 cup green tomatillos (canned)
1/2 bunch cilantro
3 packs original Hidden Valley Ranch Mix (buttermilk kind)
lime juice


Mix in a blender until smooth.

This dip is awesome with the Cafe Rio Sweet Pork recipe

Veggie Dip

1 cup mayonnaise
1 cup sour cream
1 tablespoon dried onion flakes
1 tablespoon dried parsley
1 teaspoon dried dill
1 teaspoon seasoning salt
½ teaspoon garlic powder
Mix all ingredients together till combined well. Cover and let chill in refrigerator at least 3 hours (overnight is best). Serve with fresh cut vegetables or potato chips.



yummy fruit dip

Mix together until smooth:

8 oz. cream cheese
1-cup sour cream
1 large jar marshmallow cream
Sugar to taste


Add 1/2 cup semi-sweet chocolate chips, melted for a great chocolate fruit dip!  
I highly recommend it!



Classic Macaroni and Cheese


Serves 6 to 8, or 10 to 12 as a side.

It's crucial to cook the pasta until tender--just past the "al dente" stage. In fact, overcooking is better than undercooking the pasta. Whole, low fat, and skim milk all work well in this recipe. The recipe can be halved and baked in an 8-inch-square, broiler safe baking dish. If desired, offer celery salt or hot sauce (such as Tabasco) for sprinkling at the table.

6 slices white sandwich bread (good-quality, about 6 ounces), torn into rough pieces

3 T. unsalted butter (cold), cut into 6 pieces

1 lb. elbow macaroni

1 T. table salt

5 T. unsalted butter

6 T. flour

1 ½ tsp. powdered mustard

¼ tsp. cayenne pepper (optional)

5 cups milk

8 oz. Monterey jack cheese, shredded (2 cups)

8 oz. sharp cheddar cheese, shredded (2 cups)

1 tsp. table salt

1. For the bread crumbs: Pulse bread and butter in food processor until crumbs are no larger than 1/8 inch, ten to fifteen 1-second pulses. Set aside.


2. For the pasta and cheese: Adjust oven rack to lower-middle position and heat broiler. Bring 4 quarts water to boil in Dutch oven over high heat. Add macaroni and 1-tablespoon salt; cook until pasta is tender. Drain pasta and set aside in colander.

3. In now-empty Dutch oven, heat butter over medium-high heat until foaming. Add flour, mustard, and cayenne (if using) and whisk well to combine. Continue whisking until mixture becomes fragrant and deepens in color, about 1 minute. Gradually whisk in milk; bring mixture to boil, whisking constantly (mixture must reach full boil to fully thicken). Reduce heat to medium and simmer, whisking occasionally, until thickened to consistency of heavy cream, about 5 minutes. Off heat, whisk in cheeses and 1 teaspoon salt until cheeses are fully melted. Add pasta and cook over medium-low heat, stirring constantly, until mixture is steaming and heated through, about 6 minutes. 


4. Transfer mixture to broiler-safe 9-by 13-inch baking dish and sprinkle evenly with breadcrumbs. Broil until crumbs are deep golden brown, 3 to 5 minutes, rotating pan if necessary for even browning. Cool about 5 minutes, then serve

Avocado-Corn Salsa


2 small to medium ripe avocados, peeled, seeded, and finely diced


1 cup fresh or frozen corn kernels


2 medium tomatoes, seeded and finely diced


2 to 3 tablespoons fresh-squeezed limejuice


1 tablespoon finely chopped fresh cilantro

1/2 T. shallot


1/2 teaspoon salt

In a medium bowl, gently combine avocado, corn kernels, tomatoes, limejuice, cilantro, shallots and salt.

cover and refrigerate until ready to be served.

Yields 1 1/2 cups or 24 T.

Baked Sweet Potato Fries with Honey-lime Dip

1 lb. peeled sweet potatoes cut into ¼” match-sticks
2 T. olive oil
1-2 T. Baby Bam mix (below)

Pre-heat oven to 425 degrees.

Place sweet potatoes in a large bowl and drizzle with olive oil.  Sprinkle seasoning mixture on top and toss to coat.

Arrange sweet potatoes in a single layer.  Place pan in oven and bake for 15 minutes.  Use a metal spatula to gently flip fries and then return pan to oven.  Cook for an additional 15-20 minutes or until fries are starting to lightly brown and crisp.  Remove pan from oven and cool 5 minutes.  Serve immediately.

Honey-lime Dip

6 oz. container plain, low-fat yogurt or sour cream
1 T. honey or corn syrup
1 T. fresh limejuice
¼ tsp. cumin
1/8 tsp. oregano
1 tsp. parsley
½ tsp. onion powder
½ tsp. kosher salt

Mix all ingredients until combined.  Chill until ready to use.

Baby Bam Seasoning Mix

½ tsp. celery salt
1 tsp. dried thyme
1 tsp. dried basil
1 tsp. dried oregano
1 tsp. ground black pepper
2 tsp. garlic powder
2 tsp. onion powder
2 T. dried parsley
2 T. salt
3 T. paprika

Place all the ingredients in a small mixing bowl and stir well to combine, using a wooden spoon.  Then store in an airtight container for up to 3 months.
Yield:  about ¾ cup
This seasoning mix is also excellent on chicken, steak, pork, and roasted veggies.
