Baked Sweet Potato Fries with Honey-lime Dip

1 lb. peeled sweet potatoes cut into ¼” match-sticks
2 T. olive oil
1-2 T. Baby Bam mix (below)

Pre-heat oven to 425 degrees.

Place sweet potatoes in a large bowl and drizzle with olive oil.  Sprinkle seasoning mixture on top and toss to coat.

Arrange sweet potatoes in a single layer.  Place pan in oven and bake for 15 minutes.  Use a metal spatula to gently flip fries and then return pan to oven.  Cook for an additional 15-20 minutes or until fries are starting to lightly brown and crisp.  Remove pan from oven and cool 5 minutes.  Serve immediately.

Honey-lime Dip

6 oz. container plain, low-fat yogurt or sour cream
1 T. honey or corn syrup
1 T. fresh limejuice
¼ tsp. cumin
1/8 tsp. oregano
1 tsp. parsley
½ tsp. onion powder
½ tsp. kosher salt

Mix all ingredients until combined.  Chill until ready to use.

Baby Bam Seasoning Mix

½ tsp. celery salt
1 tsp. dried thyme
1 tsp. dried basil
1 tsp. dried oregano
1 tsp. ground black pepper
2 tsp. garlic powder
2 tsp. onion powder
2 T. dried parsley
2 T. salt
3 T. paprika

Place all the ingredients in a small mixing bowl and stir well to combine, using a wooden spoon.  Then store in an airtight container for up to 3 months.
Yield:  about ¾ cup
This seasoning mix is also excellent on chicken, steak, pork, and roasted veggies.
