Dressing
1/3 cup lime juice
½ cup olive oil
1 tsp. salt
1 clove minced garlic
Salad
2 cans black beans rinsed
1 ½ cups frozen corn
½ cup cilantro
1 avocado diced
1 chopped red pepper
6 green onions chopped
2 chopped tomatoes
Combine salad ingredients with dressing and toss well. Serve with tortilla chips.
This recipe makes enough for 4-5 adults.
