Cream together:
1 c. butter
¾ c. sugar
Add and beat until fluffy:
2 eggs
Add:
1 c. grated carrots
Sift together and add:
2 c. flour
2 tsp. baking powder
½ tsp. salt
Stir in:
¾ c. coconut
½ tsp. orange rind grated
Cover bowl and set in fridge for 30 minutes
Drop by teaspoon on parchment-lined baking sheet
Bake 350 for 8-10 minutes
Remove from oven and let sit on pan for 3 minutes before removing to cooling rack. Allow to fully cool before icing. Store cookies in the refrigerator.
Icing
1 T. orange juice
2 tsp. grated orange peel
1 c. powdered sugar
2 T. soft butter
2 tsp. vanilla
Add enough cream to make the right consistency
